A creamy, flavorful pasta dish that’s so good, it’s said to inspire tips! This hearty recipe features a sun-dried tomato cream sauce with a hint of spice that pairs perfectly with your favorite pasta.


Ingredients

  • For the pasta:
    • 12 ounces (340 grams) of your favorite pasta (pan, spaghetti, or rigatoni work well)
    • Salt for boiling water
  • For the sauce:
    • 2 tablespoons of olive oil
    • 3 cloves garlic, minced.
    • 1 tsp red chili flakes (to taste)
    • 1 cup (150 g) sun-dried tomatoes, chopped (in oil, slightly drained)
    • 1 ½ cups (375 mL) heavy cream
    • ½ cup (50 grams) grated Parmesan cheese
    • 1 tablespoon dried oregano
    • ½ teaspoon black pepper
    • ½ teaspoon salt (to taste)
    • ½ cup (120 mL) chicken or vegetable broth
  • For the Garnish:
    • Fresh basil leaves, chopped.
    • Extra grated parmesan cheese

Instructions

  1. Cook the pasta:
    • Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve ½ cup pasta water, then drain and set aside.
  2. Prepare the sauce base:
    • Heat the olive oil in a large pan over medium heat.
    • Add chopped garlic and red chilli flakes, fry for 1-2 minutes until fragrant.
  3. Add sun-dried tomatoes:
    • Stir in the chopped sun-dried tomatoes and cook for another 2 minutes.
  4. Make the cream sauce:
    • Reduce the heat to medium and stir in the heavy cream and chicken/vegetable broth. Stir well to combine.
    • Mix in grated parmesan cheese, dried oregano, salt and pepper. Simmer for 4-5 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Combine pasta and sauce:
    • Add the cooked pasta to the pan with the sauce. If the sauce is too thick, add the pasta water a little at a time until you reach the desired consistency.
    • Stir well to coat the pasta evenly.
  6. Serve garnished with:
    • Top with fresh chopped basil and extra Parmesan cheese for garnish.
    • Serve immediately paired with garlic bread or a crisp green salad.
